This tour takes you to Yamato Soy Sauce & Miso in Kanazawa, a historic brewery founded in 1911 that has been crafting fermented foods for over a century. Koji (fermented rice) is an essential element of traditional Japanese cuisine, serving as the foundation for regional staples like soy sauce and miso.
During the tour, guests enjoy a guided walk through Koji Park, hands-on miso soup making, a fermented food lunch, and a tasting of doburoku (cloudy sake). Throughout the experience, visitors will discover the history, craftsmanship, and rich flavors of Japanese fermentation culture.
